Sushi Ichiban (すし一番) is a conveyor-belt sushi restaurant in Kurume, Fukuoka Prefecture, Japan, run by the Yamashita fish shop. Go for the ultra-fresh fish, hand-rolled to order or circling on the belt, in a warm local setting that welcomes everyone.

What it is

Sushi Ichiban is a kaiten sushi restaurant in Kurume, Fukuoka Prefecture, owned by the Yamashita fish shop, a fresh-fishmonger business. Staff hand-roll each piece to order while plates also circulate on the belt, so you get both freshly made and ready-to-eat options in one lively room.

It is a beloved everyday neighbourhood sushi shop rather than a rare-treat destination. The fish is bought fresh daily by expert buyers, and seasonal specials are chosen at the market each morning.

The shop grew out of a fishmonger's trade, and that heritage shows in the sourcing. Expert buyers head to the market each morning, judge the day's catch, and decide what deserves a place on the belt, so the selection is a moving snapshot of the season rather than a fixed menu.

What to order

Signature nigiri includes hon maguro (bluefin tuna), raw salmon and lightly seared salmon, engawa (flounder fin), uni gunkan, hotate scallops and negitoro. For something more playful, creative rolls such as ebi avocado and salmon avocado sit alongside squid, shrimp, raw shrimp and corn gunkan.

There are also fried foods, soups and desserts, and the seasonal daily specials rotate based on what the buyers find at the market. Toppings and rice are deliberately generous, so each piece is a big, satisfying bite.

Portions are deliberately oversized, with both the topping and the rice bed scaled up for a satisfying bite, so a handful of plates is plenty. If you are eating with children, the corn gunkan and the avocado rolls are reliable favourites, while negitoro and uni gunkan keep seasoned sushi fans happy.

The room

The atmosphere is lively and friendly, with both counter and table seating. Guests range from families with children to seniors and solo diners, and the vibe is warm local hospitality rather than formal dining.

Plates of ultra-fresh fish circulate on the belt while the kitchen hand-rolls pieces to order, keeping the energy high and the service relaxed. It is the kind of place where a quick lunch with friends or a relaxed family dinner feels equally at home.

Getting there

The flagship is Sushi Ichiban Yunoso Main Store, 2228-840 Kamitsu-machi, Kurume City, Fukuoka 830-0052, on National Route 325. It is about a 2-minute walk from the Yunoso bus stop, and the nearest rail station is JR Araki Station.

There is free parking for about 35 cars. Cash, credit cards, PayPay and Rakuten Pay are accepted, and takeout is available by phone order. Note that reservations are not accepted; it is walk-in only.

If the main store is busy, the second branch, Sushi Ichiban Kamitsu Store at 1669-1 Kamitsu-machi, sits along the same highway with its own parking and a Monday closing day. Weekends and holiday meal times are the busiest slots, and the shop warns that it may not be able to seat new guests after 20:00.

Who it suits

It suits families, groups of friends, seniors and solo diners looking for fresh sushi in a relaxed setting. Because it is walk-in only, it works well for spontaneous visits and for travellers exploring Kurume and northern Kyushu.

The generous portions and wide range of dishes make it easy to please everyone at the table, from children who want familiar rolls to diners keen on seasonal specialities.

Takeout, ordered by phone, means the sushi travels well too — handy for a hotel-room dinner or a picnic stop while touring northern Kyushu.
